Breakfast Recipes for the Week

brepreA lot of times, 9-5 workers skip breakfast because they have to rush out of the house very early in the morning to beat the traffic in the city and get to work in earnest. This practice is common but absolutely very wrong. Breakfast as we all should know by now is the most important meal of the day.
The following are some quick breakfast recipes that can help better your mornings for the rest of the week. Trust me; you can achieve them in just 5 minutes!
Banana Milk Shake
It’s easy and simple
Ingredients
  • 1-2 bananas (preferably frozen)
  • 1 cup (8 ounces) ice
  • ½ cup (4 ounces) milk
  • 1 scoop (3 ounces) vanilla ice cream
  • 1 ½ tsp Vanilla extract (optional)
  • Any additional flavours you may desire (mango, pineapple, chopped almonds, blueberry, etc.)
Preparation
  • Cut bananas into chunks and put into the blender – Bananas are best if frozen; this makes the drink chilled.
  • Add ½ cup milk and 1 cup ice to the blender.
  • Add a scoop of ice cream – This gives the milk shake its richness. Vanilla is standard and will make the milkshake lovely and tasty, but you can choose the flavour you wish. You can even get creative with bursts of different flavours.
  • You can choose to add flavours like mango, almonds or even peanuts.
  • Blend ingredients until mixture is smooth – If ice is stocked in the bottom of your blender, take a spoon and mix between blending sessions which should not take more than 3 minutes.
  • You can choose to garnish your milk shake with syrups of your choice. I personally love to squeeze some chocolate syrup in the sides of my glass cup before pouring the milk shake in it.

Avocado and Egg Sandwich
This recipe is very nutritious and healthy as it contains avocado. For more details about the benefits of avocado, click here.
Ingredients
  • 1 Egg
  • ½ Avocado
  • 2 slices of bread, wheat preferably.
  • Salt
  • Vegetable oil

Preparation
  • Get a clean frying pan, heat it up and add oil.
  • Beat eggs and add a pinch of salt and pour into the pan.
  • Put avocado in a bowl and mash with fork till it’s a thick paste (you can add salt and little pepper for more flavour).
  • Spread the avocado on a slice of the bread, add the eggs and place the other slice of bread on top and voila! Your breakfast is ready.

Cucumber Watermelon Salad
The good thing about his recipe is that you can prepare it the night before, and store in your fridge for the morning.
Ingredients
  • 1 small red onion, halved and sliced into thin half-moons
  • 2 tablespoons lime juice, or more to taste
  • 2 tablespoons extra-virgin olive oil
  • 1 seedless watermelon, cut into cubes
  • 3 baby cucumbers, seeded and cut into cubes
  • 1 cup crumbled feta cheese
  • 1/2 cup mint leaves, sliced thinly

Preparation
  • Mix red onion with lime juice in a bowl; set aside to marinate at least 10 minutes. Stir olive oil into mixture.
  • Toss watermelon, baby cucumbers, and feta cheese together in a large bowl. Pour the red onion mixture over the watermelon mixture; toss to coat. Sprinkle mint over the salad; toss… and breakfast is ready!
